- 8 small corn or flour tortillas
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (400g) black beans, rinsed and drained
- 1/2 cup corn kernels (fresh or frozen)
- 1 tsp chili powder
- 1/2 tsp cumin powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste

- Salsa (store-bought or homemade)
- 1 avocado, diced
- Sour cream or Greek yogurt (optional)

Prepare the Filling: Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.

Cook Beans & Corn: Add the rinsed and drained black beans, corn kernels, chili powder, cumin powder, and smoked paprika to the skillet. Stir well to combine all ingredients and spices. Cook for 5-7 minutes, stirring occasionally, until the mixture is heated through and flavors have blended. Season with salt and pepper to taste.

Warm Tortillas: While the filling is cooking, warm the tortillas. You can do this by heating them in a dry skillet over medium heat for 30 seconds per side, wrapping them in a damp paper towel and microwaving for 30-60 seconds, or wrapping in foil and heating in a preheated oven (180°C/350°F) for 5-7 minutes.

Assemble Tacos: Lay out the warm tortillas. Spoon a generous amount of the bean and corn filling into the center of each tortilla.
