Instructions
- 1
Step 1: Crumble the Paneer. If using a block of paneer, grate or crumble it finely using your hands. Set aside. Ensure it's fresh and soft.
- 2
Step 2: Sauté Aromatics. Heat oil or ghee in a kadai or pan over medium heat. Add cumin seeds and let them splutter. Add finely chopped onions and sauté until translucent and light golden brown. Add ginger-garlic paste and green chilies, sauté for 1-2 minutes until the raw smell disappears.

Step 3: Add Vegetables (Optional) and Spices. If using, add finely chopped capsicum and sauté for 2-3 minutes until slightly tender but still crunchy. Add finely chopped tomatoes and cook until they soften and the oil separates from the mixture. Stir in turmeric powder, red chili powder, and coriander powder. Cook for another 1-2 minutes.

Step 4: Incorporate Paneer. Add the crumbled paneer to the pan. Mix gently with the masala. Be careful not to mash the paneer too much. Add salt to taste. Cook for 2-3 minutes, allowing the paneer to absorb the flavors.

Step 5: Finish and Garnish. Sprinkle garam masala and crushed Kasuri Methi over the paneer bhurji. Mix well. Turn off the heat. Garnish generously with fresh coriander leaves.
- 6
Step 6: Serve Hot. Serve your delicious and quick Paneer Bhurji hot with buttered toast, pav, roti, paratha, or as a side with dal-rice.
