- 1 cup cooked rice (white or brown)
- 1 tbsp lime juice
- 2 tbsp chopped cilantro
- For the Bean Filling:
- 1 tbsp olive oil
- 1/2 onion, chopped
- 1 clove garlic, minced
- 1 can (400g) black beans, rinsed and drained
- 1/2 tsp cumin powder
- 1/2 tsp chili powder
- Salt to taste
- Other Fillings:
- 1/2 cup shredded lettuce or cabbage
- 1/2 cup diced tomatoes
- 1/4 cup corn kernels
- 1/4 cup shredded cheese (cheddar or Monterey Jack)
- Sour cream or Greek yogurt
- Salsa or hot sauce

Prepare Cilantro-Lime Rice: In a bowl, combine the cooked rice with lime juice and chopped cilantro. Stir well and set aside.

Cook Bean Filling: Heat olive oil in a skillet over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant. Stir in the rinsed and drained black beans, cumin powder, and chili powder. Cook for 5-7 minutes, stirring occasionally, until heated through and well combined. Season with salt to taste. Remove from heat.

Warm Tortillas: Warm the large flour tortillas. You can do this by heating them in a dry skillet over medium heat for 20-30 seconds per side, or wrapping them in a damp paper towel and microwaving for 30-60 seconds, or wrapping in foil and heating in a preheated oven (180°C/350°F) for 5-7 minutes. Warm tortillas are more pliable and easier to roll.

Assemble Burritos: Lay a warm tortilla flat on a clean surface. Spoon a line of cilantro-lime rice in the center, leaving space at the top and bottom. Then, add a line of bean filling next to the rice. Follow with shredded lettuce, diced tomatoes, corn kernels, and shredded cheese.

Add Sauces & Roll: Drizzle with sour cream or Greek yogurt and salsa/hot sauce over the fillings. To roll: Fold the bottom edge of the tortilla up over the filling. Fold in the sides, then tightly roll the burrito from the bottom up until it's a neat, secure wrap.
